Domaine de la Cabernelle in the Loire Valley: let's talk about it

Bertrand Caslot, can you introduce your vineyard?

"The vineyard of 37 hectares, 100% cabernet franc, of the Domaine de la Cabernelle has been a family business for several generations. The age of the vines cultivated in organic method and their optimum exposure give a true identity to each of our wines on each vintage. During the vinification, we use only indigenious yeasts and no sulphite is added during fermentation, only a minimum dosage is added at the first racking. Some of our wines are aged only in stainless steel tanks. For the more powerful vintages, the wine benefits greatly from being aged in old oak barrels for up to one year.  Some of our wines are fruity and fleshy, some other have a beautiful harmonious concentration thanks to a low yield (old vines, about 50 years old)."
